I love the crunchy texture of a fresh veggie slaw, but I have never loved it with the typical coleslaw mayonnaise dressing. Here’s a super simple recipe to serve as a side dish. You can make it in about ten minutes, and it keeps well for a few days in the fridge.
Summer Slaw Ingredients
½-1 small red cabbage, very thinly sliced
½-1 small green cabbage, very thinly sliced
1 ½ cups grated carrots
2 tablespoons each of chopped, fresh basil, mint, and either cilantro or dill
Summer Slaw Dressing
Juice of ½-1 lemon
3 tablespoons sherry or apple cider vinegar
Pinch of fine sea salt
1 teaspoon of dijon mustard
1 teaspoon maple syrup
Let these sit for about five minutes, and then whisk in ⅓ cup of olive oil.
